Discovering Martha is on Fine Living at 11pm is not going to help me get to bed any earlier each night! She is right now making a peg board organizer for tools, but I tend to think of a varied other dozen uses for it - perfect in the garage with hooks for mops and brooms and grocery bags, or in the mud room for umbrellas, ski masks, swimming masks, and buckets with bugspray and suntan lotion. Naturally I mentally went to the kids room and sure enough a quick search on her web site turned up this, kids organized. I will change it up a bit but I like the idea, probably behind my sons door would work best, but a must in my girls closets.. Love that!
Now, on to a new recipe, I thought I would post one, maybe two a week depending if its a good week, so this week here you go.... but first the reason why it is this.. i offered to take a few meals to a friend of mine who has just become misserable with some back issues, I really can't imagine - really when i've sinched my back out a bit it hurts and is a tad unbearable, but its none the less excrutiating, so i really cant imagine the constant persistant pain , so how can I help out, hopefully make a few meals catered to her needs, which happen to be vegan - NO problem thats practically how I cook these days. So look to the left there are a few vegan sites listed, and I played around with this recipe: vegan lentil soup
1 tbsp evoo (thanks Rachel Ray for that abreviation)..in medium pot add 2 cups rinsed lentils to 4 cups water, bring to a simmer..cook 30 mintues..saute (1 chopped onion, 2 large carrots, 2 stalks celery)..until onions are translucent 8-10 min or so, add 2 cloves diced garlic..add 2 cups water, simmer on low add 2 tsp oregano, 2 tsp cumin, 2 tsp salt substitute (watching sodium here!), be liberal with the pepper..Drain lentils and add to pan, cook pasta (I used an organic gemelli) ..Add pasta and lentils with 4 cups organic vegetable broth, and the zest and juice of one lemon and 2-3 tbsp.. red wine vinegar. Then in saute pan heat 2 tsp evoo add 2 cloves sliced garlic heat through then add 4 cups rinsed and chopped arugula, add to soup. Serve. vegan lentil soup.
now then, its week 3 so where did week 2 end, great progress, a little stand still and a lot of giggles and tickles and rain! There are 3 little boxes atop the garage stairs for recycling, I didnt make 14 miles but I made progess, increased yoga, and I did find a drop off for more donations. And have had a sick boy to tend to. Now, for week 3 - hit 14 miles - there is NO other week than this week, what is accomplished NOW can set the tone for my own inability to follow through each week this year- what kind of example does that make me to my kids....... rearrange garage and start packing, moving seems so far away and finding THAT house even more blurry, but step out with a little faith will ya! seriously the kids pray for a new house each day at dinner - hmmmmmm, the faith of a child perhaps! Off, to do more laundry - should that be on my list this week - nah.
